Honey-Glazed Ham

"Every year the purveyors of spiral sliced ham run advertisements that make your mouth water. Including beauty shots of a glistening ham with a crackly coating. Your rotisserie can help you to achieve the same crispy coating, and for a lot less than that ham from the store. Basting with a combination of honey and raw sugar during the last 30 minutes of cooking time will give you that delicious, crunchy glaze."

One 5-pound fully cooked boneless or bone in ham

SPICED HONEY GLAZE:
1/2 cup honey
2 teaspoons fresh lemon juice
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves

1/2 cup raw sugar crystals

Load the ham onto the spit rod assembly and roast until an instant-read thermometer inserted into the thickest part of the ham registers 160 degrees, about 13 minutes per pound.

While the ham is cooking, combine the glaze ingredients in a small bowl and stir until smooth.

About 30 minutes before the ham is done, stop the machine and brush the ham with the honey glaze. Then sprinkle the sugar crystals evenly over the glaze. Restart the machine and continue roasting.

Remove the ham from the spit rod, being careful not to knock off any of the crust. Cover loosely with aluminum foil and allow it to rest for 10 minutes before carving.

I have to plan a theme Christmas dinner for our section at work for a progressive dinner. Our them was a southern Christmas, but that’s been done so much. I want to make it more of a classic southern Christmas, like what you’re Grandparents would have done. I need some ideas on what types of foods to have people bring or different decorations I can do. We’re going to have a classic ham I know, but everything else is up in the air. I do need somthing that is easy to serve though and ideas that are ok for an office party. Go to the Library and in the cooking section get a southern cookbook from the 1930’s there will be recipes and party ideas – many of the Ladies Home Journal books were a wealth of entertainment tips as well as recipes. You could also check with your mom or grandparents for really authentic ideas. Have Fun!

Fabulous Baklava

"A Greek favorite that makes everyone think you are a master chef and is sooo easy to make!! I taught a Greek friend how to make apple pie and she taught me this fabulous recipe. The phyllo dough for this recipe is found in the freezer section of most grocery stores. Add a little lemon zest to the sugar sauce, if desired."

INGREDIENTS:
1 (16 ounce) package phyllo
dough
1 pound chopped nuts
1 cup butter
1 teaspoon ground cinnamon 1 cup water
1 cup white sugar
1 teaspoon vanilla extract
1/2 cup honey

DIRECTIONS:
1. Preheat oven to 350 degrees F(175 degrees C). Butter the bottoms and sides of a 9×13 inch pan.
2. Chop nuts and toss with cinnamon. Set aside. Unroll phyllo dough. Cut whole stack in half to fit pan. Cover phyllo with a dampened cloth to keep from drying out as you work. Place two sheets of dough in pan, butter thoroughly. Repeat until you have 8 sheets layered. Sprinkle 2 – 3 tablespoons of nut mixture on top. Top with two sheets of dough, butter, nuts, layering as you go. The top layer should be about 6 – 8 sheets deep.
3. Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan. You may cut into 4 long rows the make diagonal cuts. Bake for about 50 minutes until baklava is golden and crisp.

4. Make sauce while baklava is baking. Boil sugar and water until sugar is melted. Add vanilla and honey. Simmer for about 20 minutes.
5. Remove baklava from oven and immediately spoon sauce over it. Let cool. Serve in cupcake papers. This freezes well. Leave it uncovered as it gets soggy if it is wrapped up.

Mom’s Best Peanut Brittle

"This is a wonderful peanut brittle that is easy to make and wows everyone! Have all the ingredients for this recipe measured out and ready. This recipe requires that you react quickly. You do not have time to measure ingredients in between steps."

INGREDIENTS:
1 cup white sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1/4 cup water 1 cup peanuts
2 tablespoons butter, softened
1 teaspoon baking soda

DIRECTIONS:
1. Grease a large cookie sheet. Set aside.
2. In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts. Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.
3. Remove from heat; immediately stir in butter or margarine and baking soda; pour at once onto cookie sheet. With 2 forks, lift and pull peanut mixture into rectangle about 14×12 inches; cool. Snap candy into pieces.

I don’t want to do turkey or ham, and my mom is doing lasagna on Christmas day. This is for Christmas Eve dinner with my dad. Any ideas would be greatly appreciated!!

A nice dish my mom used to make is a Roast cooked dry in the oven in low heat. A slow cook keeps the juices in. Then with the juice in the pan make yorkshire pudding.(kind of like a popover) I believe it is a British dish. Very tasty. She served it with a green vegetable, and potatoes.

There’s a really easy Spinach and Tofu soup recipe that is amazing. All it needs is diced tofu (about 1 cup to serve 4 people), 1 cup of spinach leaves, chicken broth, 2 or 3 cloves of garlic, 1 bunch of scallions (green onions) and salt and pepper to taste. Cook until warm. Try not to cook too long, though. It will cause the tofu to overcook and it will fall apart. It still tastes good though.

I am having my in laws over for Christmas dinner. My mother in law wanted me to make a turkey, but I would rather not slave over an oven all day. I thought about a ham, but no one likes that idea. Any suggestions?

My family always has Prime Rib. You can do simple side items, like potatoes and a vegetable and a salad, and not all of the stuff that goes with a turkey.

Vegetarian Nut Loaf

INGREDIENTS
2 large onions, finely chopped
1 cup chopped fresh mushrooms
1/4 cup finely chopped green pepper
2 tablespoons butter
3 cups grated carrots
1 1/2 cups chopped celery
5 eggs, beaten
1/2 cup chopped walnuts
1/4 cup unsalted sunflower kernels
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
3 cups soft whole wheat bread crumbs

DIRECTIONS
In a nonstick skillet, saute onions, mushrooms and green pepper in butter until tender. In a bowl, combine the mushroom mixture, carrots, celery, eggs, walnut, sunflower kernels, salt, basil, oregano and pepper. Stir in bread crumbs:

Coat a 9-in. x 5-in. x 3-in. loaf pan with nonstick cooking spray, then line with waxed paper. Transfer vegetable mixture to a prepared pan. Bake at 350 degrees F for 1 hour or until a meat thermometer reads 160 degrees F Let stand for 10 min before slicing.

just dont fancy a traditional christmas roast this year, i find turkey bland and it not much different to a sunday dinner only piled higher!
Soo any alternatives to the english tradition of turkey, roast veg, potatoes, stuffing white sauce,and a few greens?

something tasty ritch in taste but ive ran out of ideas 10 poibnts to best idea! feeding a family of 5, 2 adults 3 children one of which will be eating it liquidised as only 6months old.

I would also like a good honey glazed ham recipe. Fast and easy.

I love to make a prime rib roast for Christmas dinner. Try to let it reach room temperature, as it will then cook more evenly. Then, liberally put on kosher salt and lots and lots of freshly ground pepper all over the outside. You really don’t need anything else! Bake at 450 for 20 minutes, then lower to 325 for approx one hour and 20 minutes. It is done when reaches 115 degrees. If not at 115, check every 8-9 minutes. Don’t overcook.

Honey Baked Ham, cook 10 lb bone in ham at 325 for approx. 2 hrs.Insert whole cloves in ham first. Make a glaze out 1/2 c. honey, 1/2 c. brown sugar, 1 tsp. dry mustard, and 1 tbsp. orange juice. Add half glaze to ham and then half way through cooking add the other half. Be sure to let rest 15 minutes when done before cutting.

before i even looked at your question and saw ur italian i already was thinking lasagna for sure. i know you could make it too its easy and you could be creative and have salad garlic bread and extra gravy too lol

From everyone responses to my questions, I am getting more and more great ideas about Christmas. Can you please share with me your a recipe or possibly more recipes for Christmas breakfast and dinner? What’s the perfect Christmas dinner in your and your family’s eyes. I was never interested in Christmas, but I want to make my nieces, nephews, and godchildren to have a brighten Christmas if not for me for my late mother and sister.
