any good ideas for christmas eve dinner?
Jan 4th, 2010 by admin
I am having my parents over for Christmas Eve dinner and it will be the first one that I am moved out of my house! The house is still a mess, and I m just learning how to cook but I am good at following recipes, so any nice ideas for an easy yet somewhat elegant meal? I will be serving 5 people and by the way we love Italian food if that helps…thanks a bunch!

This is as simple as it gets!
Get some frozen, cooked and peeled shrimp! get some land o’ lakes garlic butter! Melt butter in deep pan when it starts boiling add the shrimp! after a few minutes (3-4) turn off and serve over a bed of angel hair pasta with warmed italian bread and a salad from a bag! If you want to have wine, get an italian frescati. It is lite, white, and fruity! The whole meal should take you less than 15 minutes to cook!

Try some of those refrigerated pastas and sauces at the store. Pair them with a nice wine and some tiramisu, you will be a hit with very little effort. If you really want to cook, go to rachaelray.com for some 30 minute meals, they are great.

I am a cook at an Italian restaurant and one of my favourite dishes to prepare is Rigatoni Matriciana. Its simple to make and really hard to stuff up.
Ingredients-
500g pkt rigatoni or penne pasta
250g bacon rashers
med brown onion
2 500ml jars napoilitana sce
250ml cream
2 tblsp tobasco sce (or you can add less or more to taste)
parmesian cheese
Cook pasta to packet directions.
Chop onion and bacon and fry in small amount of oil untill onion soft and bacon slightly browning.
Add napolitana sauce and cream and stir until heated through.
Add good handful of grated parmesian and tobasco sauce.
Add sauce to pasta and stir through.
Serve with Chopped spring onion on top and garlic bread on the side.
Good luck, I hope this helps you out, its one of my favourite pasta dishes.

Hi Jackie, I’m also Italian, and I’ll be cooking for my family who is visiting directly from Italy. What I have done is try to combine both traditions (I live in the UK). On Christmas Eve we normally have a light dinner based on fish and seafood – meat is normally served for lunch on Christmas Day. I have planned to serve 2-3 different antipasto (tapas size) of:
– smoked salmon
– fish roe with celery (you can use salmon roe or simply buy some taramosalata)
– pickled veg (e.g. artichokes in oil, etc)
These will be followed by a light soup (you can pick one of your favourites and perhaps change something in it or present it in a different way). The main will be a tuna tartare, accompanied by vegetables (probably leaves + a ring of potato and pumpkin mash). For pudding, I might prepare a creme caramel or get some ice cream and serve it with some light biscuits. Hope this helps.
