Christmas Dinner Sides suggestions and recipes. I am making rack of lamb. Any side suggestions?

I am making rack of lamb for Christmas. Does anybody have any good suggestions that will go with that? It’s only dinner for two so I don’t want to make too much. Maybe two sides and that’s it. Thanks!
MUSHROOMS ALFREDO
1 pkg. Gourmet Stuffing mushrooms
3 or 4 green onions
2 tbsp. butter
1 pkg. Knorr Alfredo mix
1 lb. fresh crab meat or 1/2 lb. imitation crab meat
Remove stems from mushrooms. Discard stems. Prepare Alfredo sauce as directed. Chop green onions and saute in butter. Add crab meat to onion and butter. Preheat oven to 350 degrees. Combine in bowl crab meat mixture and Alfredo sauce. Stuff mushrooms with mixture. Place mushrooms in buttered Pyrex dish. Bake for 45 minutes at 350 degrees. For crispy coating on top, after cooked place in broiler for a few minutes.

If you wish about 5 minutes before done, sprinkle with Parmesan or Romano cheese.

You can make up some baked potatos and then have another vegetable as a side, doesn’t have to be anything fancy.

have never had rack of lamb but I do know, it ain’t Christmas dinner unless there is dressing (stuffing). For sure, that gets my vote.

Roasted root vegetables:
Use whatever vegetables you like cut into bite-sized pieces. (I usually use red potatoes, sweet potatoes, carrots, parsnips, fennel, onion, and whole garlic cloves)
Toss veggies with olive oil, rosemary, salt and pepper. Spread on a baking sheet lined with no-stick foil and bake at 400 degrees, stirring occasionally, until tender (~30-40 minutes or so).
A nice green salad and some good french bread ought to do it.
