Our family does a traditional prime rib roast some years, a full filet of beef other years. You can also do a full boneless New York striploin. Cut the portion you need and save the rest.
Roasted rosemary lamb rack or chops, with a cabernet reduced wine sauce
Small roasted new potatoes, glazed carrots in brown sugar and a sweet wine. Whole baked tomatoes stuffed with celery, butter and garlic, sauteed Chinese long beans, acorn squash stuffed with wild rice, raisins and dried apricots.

What about pork tenderloin, with roasted red potatoes seasoned with garlic and rosemary, sauteed green beans with shallots and corn bread. Simple, filling and delicious.
Here are my recipes:
Garlic – Pepper Seared Pork Tenderloin
1 (2 pound) pork tenderloin
2 tsp garlic powder
1 tsp salt
2 tsp black & red pepper seasoning
1 tbs Olive Oil
Trim fat and silver skin from tenderloin. Mix seasonings, rub mixture all over meat. Cover with plastic wrap, set out for 30 minutes.
After 20 minutes, turn oven to 425 degrees. Place oven safe skillet on stove, large enough to hold meat, turn to medium-high heat, add olive oil.
When oil begins to ripple, place tenderloin in skillet with tongs, don’t move it. Let sear for 2 minutes, turn over & sear 2 minutes. Repeat process until all sides are seared.
Put skillet in oven & cook approximately 35-40 minutes, or 20 minutes per pound. Check meat thermometer, internal temperature at 155 degrees.
Remove from oven, place on cutting board, cover with foil. Let rest 10 minutes before slicing. Temperature will rise to 160 degrees, medium (slight pink center).
Roasted Red Potatoes
with Garlic & Rosemary
3 lbs small red potatoes
3 gloves garlic
1 tbs fresh rosemary
Olive Oil
1 tsp Kosher Salt
1/2 tsp pepper
Set oven to 425 degrees. Rinse potatoes. Cut into 4 pieces or bite size. Place in bowl.
Coat with Olive Oil, about 2-3 tbs. Season with salt & pepper. Spread potatoes on a 13 x 9 sheet pan. Place in oven set timer for 40 minutes.
When timer goes off, leave potatoes in oven. Dice garlic & remove the leaves off rosemary stem,
finely chop. Remove potatoes from oven, sprinkle with garlic & rosemary. Carefully stir to mix ingredients. Return potatoes to oven, cook another 5-7 minutes.

I have a friend who’s family has a different theme each year for their Christmas dinner. They said that by the time they got done with Thanksgiving dinner the last thing they wanted was more turkey and ham.
This year they’re having a Mexican dinner…chips/dips, tortilla soup, light salad, enchiladas & tamales with all the trimmings, and some desserts. Some years it’s Italian, Asian, BBQ, and so on.
I thought it was a great idea, but my family is a bit of a bore and does the standard turkey and such for Thanksgiving and Christmas.

What about a lasagne or an eggplant parmesan. We have done fresh ravioli’s, cheese, meat or butternut sqash stuffed as well. With a salad, garlic bread and meatballs. It would great.
