What to have for Christmas dinner?

For Christmas this year, it’s just going to be my Mom, brother, boyfriend and myself. We’re making a nice dinner and have ham as our main dish, but I was trying to think of other things to have with dinner besides the normal mashed potatoes, green bean casserole, those sorts of things.
What are some interesting things that you and your family make for Christmas dinner? Any recipe links would be helpful, too! :o)

I tried to find my grandma’s recipe for this casserole, because it’s SOOO yummy, but I couldn’t. I DID however find a recipe online that’s almost identical:
(BTW: I like to add a bit of dill when I make it. Green onions are good in this, too!)

CHEESY HASH BROWN CASSEROLE:
2 lbs frozen hashbrowns, the cubed kind
1 can cream of mushroom soup
1 onion chopped (more to tase)
1/2 stick butter softened or melted
dash salt (maybe as much as 1/2 a teaspoon, depends on if the butter is
salted, or how salty the soup is etc.)
8 oz softened cream cheese
8 oz sour cream
8 oz cheddar cheese (plus some for garnishing)
Combine all the soft ingredients (everything but the potatos), using a mixer or whatever. Then, mix the potatos in by hand. put in a two quart caserole dish. Garnish with onion and cheddar cheese, or crumbled potato chips or anything else creative. Bake in the oven at 350 degrees for an hour.

For dinnes have some tamales and pozole, rice and beans with chicken or some barbacoa with consome, tacos of birria or something like that.

This can be either a dessert or side dish. Have made this for the last 10+ yrs and never have any leftovers.
Cranberry Mousse
20 oz crushed pineapple
1 c water
6 oz cranberry jello
16 oz cranberry sauce
3 tbsp lemon juice
1 tsp grated lemon peel
1/4 tsp ground nutmeg
8 oz sour cream
1/2 c chopped pecans (optional)
Drain the pineapple, reserving the liquid. Add the liquid and water to the jello in saucepan and stir. Boil until the jello dissolves; remove from the heat.
Pour the jello into a large Pyrex bowl. Blend in the cranberry sauce, lemon juice, grated lemon peel and nutmeg. Chill until the mixture thickens slightly, then blend in the sour cream. Fold in the pineapple and pecans. Chill until firm, about two to four hours, or overnight.

Three things that are delicious with ham are:
Broccolli/Rice casserole

and ‘good ol’ potatoe salad.
My family love this combo.
You might also serve french bread, sliced down the middle and
pour melted ‘white’ cheddar cheese inside , close it up to soak up the cheese. UUUMMMM delicioso’

We are having each person’s favorites: Veggies -asparagus and snap peas, appetizer- boiled shrimp, Entrees -green chili chicken enchiladas, Bar-b Que ribs; Blue cheese/walnut lettuce salad, Corn bread, New Orleans dirty rice.

Just figure out every-ones favorite foods. Forget the old traditions.

Me and hubby are still debating on Christmas dinner. I would like to do a fruited duck or a crown roast, and some type of starters, such as gazpacho or shrimp cocktail.
I hate green bean casserole, so we don’t have that; we usually have a green veggie such as spinach or asparagus, or peas with pearl onions. Hubbin isn’t too big on rice, so I usually have to make a different starch such as stuffing or corn. I’ll probably make baked sweet potatoes. Dessert is usually fruit. Generally I sick with what we like, and garnish it with spices in Christmas colors to make it festive.

Instead of the usual mashed or sweet potato casserole, one year I did cheese potatoes. I boiled and drained potatoes, made a roue, used milk and cream, a little dry mustard, and doubled the amount of cheddar cheese the recipe called for. They were a hit!
Try broccoli cheese and rice caserole, or carmelized carrots, both go with a ham very well. Our family has done both of those.
One year I made fancy green bean casserole, and they gobbled it up. I fried and crushed bacon, sauteed real mushrooms and onions, used canned green beans and of course cream of mushroom soup, put a little cheddar cheese in the soup to melt, and topped it with crushed Cheeze-its.
One year I skipped the traditional meats all together , and did breaded pork cutlets. My Dad had to be dragged away from the table at the end of the meal. He never compliments anyone on food, but he did that year!. I went with the cheese potatoes and green bean casserole, too. It was something different, and easy for someone who had to work part of Christmas, the potatoes and the beans could be done in advance, and the cranberry sauce goes well with pork, so it all looked like holiday fair.
I have an Aunt who thinks there should be a cheese cake at every holiday meal, try deluxe cheesecake on allrecipes.com submitted by Muffy. I have been looking for Mom’s date nut torte recipe, have not found it yet.
We did Apricot Antartica for dessert at the Christmas potluck Saturday. Came from Elsah’s Landing cookbook, and I found the recipe online. Vanilla icecream, almonds, and apricot jam layers. Different, and it looks festive, with all that golden jam.
